The processes in the dairy industry require control and monitoring and ITS have successfully used ERT, ECT, and USS to characterize and improve these processes.
Process tomography provides the opportunity to visualise the contents of vessels and pipelines containing different types of mixtures without disturbing the flow or process. The technology has been used in the food industry in a variety of products and processes and ITS have extensive experience in various food industry sectors including the dairy products.
One of ITS new products, the U2s, is based on the use of transient pulse measurements and is specifically developed for in-situ or on-line applications. This instrument has been used to monitor the process of Milk curdling to produce cheese. This process was simulated in the lab using standard homogenised milk and lemon juice at room temperature.

A cheese manufacturer and ITS have also applied Electrical Resistance Tomography (ERT) to measure the curd concentration in whey-curd mixtures.
